MS Flow converts currency symbol in output

We have a PowerApp with a text field that can take text information such as £500 or more or we need £750.



when the form is submitted, this shows correctly in the list...as you can see below:

In our Flow we have an email task that creates an HTML table, but the £ sign always comes out as A3 in the email...

Maybe this is something to do with encoding, but how can I get Flow to properly output A3 as £



I didn't include the email task Body html code as it's TL;DR; and won't really help with this issue as it's just one field in the data source
