how to create a data element using adobe tag manager?

So I have this website https://www.olivegarden.com where I need to do following actions
- Create a new Data element (JS snippet of code)
a. To return a formatted page name as below mentioned(i)
i. Format: siteBrand : pageType : primaryCategory : pageName
b. convert pageName “/” characters to “:”
Also checkout the window.digitalData object for more details. As I am new to this,thus looking out for suggestions/help .
